1/4 cup granulated sugar
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup melted vegan butter
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, toss the sliced apples, blueberries, 1/4 cup sugar, lemon juice, and 1/2 teaspoon cinnamon until well combined.
Transfer the fruit mixture into a greased baking dish.
In a separate medium bowl, combine the flour, 1/2 cup granulated sugar, brown sugar, salt, and 1/2 teaspoon cinnamon for the crumble topping.
Pour the melted vegan butter over the dry crumble ingredients and mix until a loose, streusel-like texture forms.
Sprinkle the crumble mixture evenly over the fruit base.
Bake for 40 to 45 minutes, or until the fruit is bubbling and the top is golden brown and crisp.
Remove from the oven and let it cool for 10 minutes before serving.
Notes
Best served warm with a scoop of non-dairy vanilla ice cream or coconut whipped cream. Store leftover crumble in an airtight container in the refrigerator for up to 3 days and reheat in the oven or microwave before serving.
