3/4 cup cold salted butter, cubed
1 teaspoon apple cider vinegar
1 1/2 tablespoons heavy cream
3 cups sliced apples
1 1/2 teaspoons melted butter
1 teaspoon lemon juice
1/4 cup packed brown sugar
1/4 cup cornstarch
Pinch of salt
1/4 teaspoon ground cinnamon
1/16 teaspoon ground nutmeg
1 large egg
1 tablespoon water
1 tablespoon coarse sugar
Instructions
Warm the heavy cream in a small saucepan over low heat.
In a separate heavy-bottomed pan, melt the 1 cup sugar until amber, then stir in butter, heated cream, and lemon juice until smooth.
Prepare the crust by mixing flour and sugar, then cutting in cold butter until crumbly.
Add vinegar and cream to the crust mixture, form into a disc, and chill.
Preheat oven to 375°F.
Toss sliced apples with melted butter, lemon juice, brown sugar, cornstarch, salt, cinnamon, and nutmeg.
