Description

These Chewy Pumpkin Chocolate Chip Cookies are the ultimate cozy fall treat. By utilizing a technique to dry the pumpkin puree, this recipe achieves a dense, fudge-like, and chewy texture that avoids the common cakey consistency of traditional pumpkin cookies. Enhanced with warm pumpkin pie spice, deep molasses, and rich semisweet chocolate, these cookies offer a sophisticated, bakery-quality experience. Perfect for gatherings or a quiet afternoon tea, these cookies are a reliable crowd-pleaser that balances earthy pumpkin notes with satisfying sweetness.

Ingredients

Scale

1/2 cup unsalted butter, melted and cooled
1/3 cup dried pumpkin puree (see notes)
1 3/4 cups all-purpose flour
1 tablespoon pumpkin pie spice
3/4 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 tablespoon molasses
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

Instructions

Spread pumpkin puree on a paper towel-lined plate and pat dry to remove excess moisture until you have 1/3 cup.
In a medium bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
In a large bowl, whisk the melted butter, granulated sugar, brown sugar, molasses, vanilla, and dried pumpkin until smooth.
Fold the dry ingredients into the wet ingredients until just combined.
Fold in the semisweet chocolate chips.
Chill the dough for at least 30 minutes to improve flavor and texture.
Preheat oven to 350°F and line a baking sheet with parchment paper.
Scoop dough into balls and place on the sheet, spacing them 2 inches apart.
Bake for 10-12 minutes until edges are set but centers remain soft.
Remove from oven and let cool on the pan for 5 minutes before transferring to a wire rack.

Notes

To dry the pumpkin, spread about 1/2 cup of canned pumpkin puree onto several layers of paper towels and press gently with more towels to absorb moisture until the weight/volume reduces to the required 1/3 cup. Store leftovers in an airtight container for up to 4 days.
