Description

These no-bake cookie bars blend melted butter, sugar, and milk with chocolate chips, oats, coconut, and walnuts for a chewy, fudgy treat. Perfect for heatless summer days or last-minute cravings, they’re simple, kid-friendly, and packed with texture and flavor.


Ingredients

1 cup butter (2 cubes)
2 cups granulated sugar
½ cup milk (whole milk recommended)
1 cup semi-sweet chocolate chips
2 cups quick oats
¾ cup shredded coconut (sweetened or unsweetened, your preference)
½ cup chopped toasted walnuts
1 teaspoon vanilla extract


Instructions

Melt 1 cup butter in a large pot over medium heat
Add 2 cups sugar and stir until dissolved
Bring to a boil, stirring constantly for 5 minutes
Remove from heat and whisk in ½ cup milk and 1 teaspoon vanilla extract
Stir in 2 cups quick oats, ¾ cup shredded coconut, and ½ cup walnuts until combined
Add 1 cup chocolate chips and mix until fully melted
Pour into a greased 13×9 inch baking pan
Let cool at room temperature for 30 minutes
Refrigerate until firm (at least 1 hour)
Cut into bars and serve


Notes

Let the mixture cool completely before refrigerating to ensure the bars set firmly
For easier cutting, refrigerate overnight. Store in an airtight container for up to 5 days
Quick oats are essential for the right texture; old-fashioned oats won’t bind properly
You can substitute walnuts with pecans if preferred
