Ingredients
2 large eggs (room temperature)
1/2 cup vegetable oil
1 cup 100% pure pumpkin puree
1 1/2 teaspoons vanilla extract
1/2 cup pure maple syrup
1 cup granulated sugar
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup chopped pecans (optional)
1 cup semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
In a large bowl, whisk together the eggs, vegetable oil, pumpkin puree, vanilla extract, maple syrup, and granulated sugar until well combined.
In a separate bowl, sift together the flour, baking powder, salt, cinnamon, and nutmeg.
Gradually add the dry ingredients into the wet mixture, stirring until just combined; do not overmix.
Fold in the chocolate chips and chopped pecans if using.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months. Ensure your pumpkin puree is 100% pure pumpkin, not pie filling. For a glossy finish, you may drizzle a simple glaze of powdered sugar and a touch of maple syrup once fully cooled.
