Description

This decadent no-bake banana pudding cheesecake is a perfect fusion of two classic American desserts. Featuring a buttery crust made of Nilla wafers and graham crackers, it is layered with a velvety banana-infused cream cheese filling and fresh banana slices. It is a wonderfully refreshing, chilled dessert that is as elegant as it is easy to prepare, making it the ideal centerpiece for potlucks and gatherings without requiring any oven time.

Ingredients

Scale

6 ounces Nilla wafers
6 sheets graham crackers
3 tablespoons brown sugar
1/2 cup melted unsalted butter
1/2 teaspoon salt
14 ounces sweetened condensed milk
2 tablespoons cornstarch
1 tablespoon water
16 ounces cream cheese, softened
8 ounces mascarpone cheese, softened
3 ripe bananas, sliced
1 teaspoon vanilla extract

Instructions

Crush the Nilla wafers and graham crackers into fine crumbs.
Combine crumbs, brown sugar, salt, and melted butter until the mixture resembles wet sand.
Press the crust mixture firmly into the bottom of a springform pan and chill in the refrigerator while preparing the filling.
In a small bowl, whisk the cornstarch with water to create a slurry.
In a saucepan over low heat, gently warm the sweetened condensed milk and stir in the cornstarch slurry until thickened, then let cool.
In a large bowl, beat the cream cheese and mascarpone until smooth.
Fold the cooled condensed milk mixture and vanilla extract into the cheese mixture until fully incorporated.
Spread a thin layer of filling over the chilled crust.
Add a layer of sliced bananas over the filling, then top with the remaining cream cheese mixture.
Smooth the top and refrigerate for at least 4 hours or overnight until set.

Notes

Ensure cream cheese and mascarpone are at room temperature before mixing to avoid lumps. For the best presentation, add a garnish of crushed wafers and fresh banana slices right before serving to prevent browning. Store in the refrigerator for up to 3 days.
