Ingredients
3/4 cup quick-cooking oats
1/2 cup oat flour
1/3 cup softened butter
1/3 cup coconut sugar
1/3 cup finely chopped pecans
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3–4 medium pears, peeled, cored, and chopped
1/4 cup coconut sugar
2 tablespoons tapioca starch
2/3 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
8 ounces cream cheese, softened
1/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C) and line an 8×8 inch square baking pan with parchment paper.
In a medium bowl, combine oats, oat flour, 1/3 cup coconut sugar, pecans, baking soda, and 1/2 teaspoon cinnamon.
Cut in the butter until the mixture is crumbly, then press two-thirds of the mixture into the prepared pan.
Bake the base for 10 minutes until lightly golden.
In a separate bowl, toss the chopped pears with 1/4 cup coconut sugar, tapioca starch, cinnamon, and nutmeg.
For the filling, beat the cream cheese, granulated sugar, egg, and vanilla until smooth.
Spread the cream cheese mixture over the partially baked base.
Top evenly with the spiced pear mixture and sprinkle with the remaining crust crumbles.
Bake for 30-35 minutes until the center is set.
Cool completely before slicing into bars.
