3 cups old-fashioned rolled oats
1/2 cup unsalted butter, softened (for filling)
2 cups powdered sugar (for filling)
1 teaspoon ground cinnamon (for filling)
1 tablespoon maple syrup (for filling)


Instructions

Preheat your oven to 350°F and line two baking sheets with parchment paper.
In a large bowl, cream together the 3/4 cup softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, followed by the pumpkin puree.
In a separate bowl, whisk together the flour, baking soda, pumpkin pie spice, and salt.
Gradually add the dry ingredients to the wet mixture, then fold in the rolled oats until combined.
Drop rounded tablespoons of dough onto the baking sheets and bake for 10-12 minutes or until the edges are golden.
Allow cookies to cool completely on a wire rack.
To make the filling, beat the remaining butter, powdered sugar, cinnamon, and maple syrup until smooth and creamy.
Pipe or spread the filling onto the flat side of half the cookies, then top with the remaining cookies to create sandwiches.


Notes

Ensure your pumpkin puree is 100% pumpkin, not pumpkin pie mix. Store finished cookies in an airtight container in the refrigerator for up to 5 days, or freeze the cookies un-filled and add the buttercream just before serving for the best texture.
