Whether for birthdays or sunny picnics, this professional-looking treat is refreshingly sweet, visually iconic, and undeniably nostalgic for dessert lovers of all ages.

Ingredients

Scale

25 vanilla sandwich cookies, crushed (for base)
4 tablespoons unsalted butter, melted (for base)
25 vanilla sandwich cookies, crushed (for topping)
4 tablespoons unsalted butter, melted (for topping)
3 ounces strawberry gelatin powder
2 cups vanilla ice cream, softened
2 cups strawberry ice cream, softened
1 cup whipped topping

Instructions

Line a springform pan with parchment paper.
Combine 25 crushed cookies with 4 tablespoons melted butter and press firmly into the bottom of the pan; freeze for 10 minutes.
Spread softened vanilla ice cream over the chilled base and freeze until firm.
Spread softened strawberry ice cream over the vanilla layer and return to the freezer.
In a bowl, toss the remaining crushed cookies with 3 ounces of strawberry gelatin powder and 4 tablespoons melted butter to create the vibrant red topping crumble.
Top the cake with whipped topping and sprinkle the strawberry cookie crumble generously over the surface.
Freeze for at least 4 hours before serving to ensure the cake sets properly.

Notes

Keep the cake frozen until the moment of serving to retain its structure. You can prepare this up to 3 days in advance and keep it tightly wrapped in the freezer. Feel free to use store-bought strawberry preserves on top for an extra fruity punch.
