Ingredients
2 store-bought or homemade pie crusts
2 1/2 cups diced apples (Granny Smith or Honeycrisp)
1/3 cup brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/4 cup all-purpose flour (for topping)
1/2 cup quick-cooking oats
1/4 cup brown sugar (for topping)
1/2 teaspoon ground cinnamon (for topping)
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
3 tablespoons unsalted butter, melted
Instructions
Preheat your oven to 400°F.
Roll the dough out to 1/8-inch thickness and cut into small circles to fit your muffin tin or tart molds.
Press the dough circles gently into the tins.
In a mixing bowl, toss the diced apples with 1/3 cup brown sugar, 2 tablespoons flour, 1 teaspoon cinnamon, and vanilla extract.
Spoon the apple mixture into the prepared dough shells.
In a separate bowl, combine all crumble topping ingredients until the mixture is crumbly.
Sprinkle the oat topping evenly over the apple-filled tarts.
Bake for 18-22 minutes or until the crust is golden brown and the filling is bubbling.
Let cool in the pan for 5 minutes before transferring to a wire rack.
Notes
Ensure your apples are diced into small, uniform cubes to guarantee even cooking. If the edges of the crust brown too quickly, cover the muffin tin loosely with foil during the last 5 minutes of baking. Store in an airtight container at room temperature for up to 2 days.
