Description

A vibrant, no-cook salad combining juicy watermelon, sweet strawberries, crisp cucumber, tangy feta cheese, and aromatic mint. This 5-ingredient dish is the perfect balance of sweetness, crunch, and saltiness, ideal for summer meals or gatherings.


Ingredients

Scale

½ medium watermelon, cubed
½ lb strawberries, sliced
1 medium cucumber, quartered and sliced
1 cup feta cheese, crumbled
1015 fresh mint leaves, roughly chopped


Instructions

Remove the top and bottom of the watermelon, then cut into cubes. Use a melon baller to remove any remaining rind.
Hull and slice the strawberries.
Quarter and thinly slice the cucumber to maximize hydration.
Crumble the feta cheese into small pieces.
Combine all ingredients in a large bowl. Top with a handful of chopped mint and gently toss.
Serve chilled or at room temperature, ideally within 30 minutes for optimal texture.


Notes

Use seedless watermelon for cleaner cubes.
